We produce hogget and mutton with real depth of flavour. Dry-aged 21 days for texture and taste.

********It’s Organic September******** For us ‘or ********It’s Organic September********
For us ‘organic’ isn’t just a label. It’s a different way of farming, producing food and shopping with nature at the heart of it. One thing you can do this organic September is to buy organic and local.
***Our organic hogget and mutton is ready to collect direct from our farm***
At The Lint Mill we rear some of the UK’s rarest native breeds of sheep – Soay and Castlemilk Moorit. Our lambs grow slowly and well on their mother’s milk and our organic grassland which contains many wildflowers and herbs. We give our sheep at least 18 months to mature, and the meat is known as hogget. The ewes who produce our hogget play a special part in our farming here at The Lint Mill and our best breeding ewes will lamb several times before they retire and produce amazing mutton.
Our organic hogget and mutton both have an incredible texture and richly flavoured meat, created by a lifetime of grazing our species-rich pastures at The Lint Mill. Our meat is dry-aged for 21 days to tenderise the meat and deepen the flavour, then beautifully butchered, packaged and labelled by our organic butcher, ready for your freezer.

Actually we love @gill.meller ‘s bashed cucumbers, green chillies, mint and spring onions, so that’s definitely on the menu.

I’ve had a lovely little enamel bucket sink instal I’ve had a lovely little enamel bucket sink installed in my studio. This, together with some new shelves and boxes has precipitated a big tidy and clear out. The space feels lovely and I’m all set for autumn into winter projects starting with this huge stained glass commission.

Last course of the season — one date left. Saturd Last course of the season — one date left.
Saturday 19th September is our final smallholding course of the year, and we'd love a full group for it. As far as we know, we're the only one-day beginner smallholding course in Scotland run on a certified organic holding — everything we teach, we practise here ourselves, every day.
"A Regenerative Approach to Small-Scale Farming" is a hands-on day here at The Lint Mill: rare breed sheep, goats and pigs, hens, growing your own food, grassland and soil health — and a home-made organic lunch from our own produce in the middle of it.
Whether you're weighing up your first acreage or already smallholding and want to do it as effectively as possible, this is a good, honest day out in a field with people who've been doing this for almost two decades.
Small groups, always — but we've a handful of spaces left for this one, and it's the last chance this year. To book - link in bio.
